This is the Almost All American Seitan Pot Pie from Veganomicon.  If it tastes as good as it looks, then I will have been successful!  Amy rolled out and patted in the crusts so I had a lot of help.  It's pretty work intensive, but it was a work of love!  Time to eat!

Breakfast - Puffy Pillow Pancakes

Puffy Pillow Pancakes

Listening to Ella Fitzgerald, and enjoying these pancakes for breakfast.  Flax seeds, if sealed up, keep for quite a long time.  These pancakes were light and delicious.  I will definitely make them again.  I just wish I had not waited so long to try them.  I happily made a second batch for Brian.  YUM!

Amy and Gina are also trying them.  I should have made more batter.  Our new stove heats a little hotter than the old one.  So we have to be careful and turn the dial a little lower than before.  Incidentally, the oven is wonderful.  The temperature indicator (digital) shows when preheat is done and the oven has reached cooking temperature!

Also, I believe the cats really like jazz.  Who would have thought?

Spinach-bean quesadillas and a short update

These turned out really well.  It was nice and simple and didn't take too long.  I used fresh spinach instead of frozen, so it was a bit on the bitter side.  I also used the pepperjack variety of Daiya, and omitted the salsa.  Still a good dinner.  I will definitely make this again.

Slow going on practicing clarinet and doing water aerobics.  I have not felt well recently, and am just plain tired.  When I went to the doctor, they did a urinalysis and lo and behold I have a bladder infection.  I am now on a course of Bactrim, so hopefully that will clear up in a few days.  Hopefully I will feel more like exercising on Monday.
